Strawberry Almond Flour Cheesecake Cookies

Soft, chewy, and bursting with strawberry flavor 🍓✨ My Strawberry Almond Flour Cheesecake Cookies are made with almond flour for a naturally gluten-free, nutrient-dense twist on a classic treat. Thoughtfully baked with wholesome ingredients, they’re a reminder that nourishing your body can still be sweet. Ingredients

  • 1/2 cup Greek yogurt

  • ½ cup cream cheese

  • 1/4 cup coconut sugar coconut sugar or Monk fruit

  • 1 large egg yolk

  • 1 /2 teaspoon vanilla extract

  • 2 cups Strawberry Almond Flour

  • 1/2 teaspoon of baking powder

  • 1/8 teaspoon sea salt

  • ¼ cup of strawberry preserves

Directions

  1. Preheat oven to 350 F and line a large baking sheet with parchment paper

  2. In a large bowl cream together yogurt, cream cheese,  and sugar until light and fluffy

  3. Mix in egg yolk, vanilla extract until smooth

  4. Add the flour and salt and mix

  5. Mix the wet into the dry ingredients

  6. Place the bowl in the fridge to set for about 15 minutes

  7. Take the bowl out of fridge and scoop 1 tablespoon sized balls and add to baking sheet and form into ball

  8. Press a round teaspoon in the center (I grease it) and create an indent where the preserve will go

  9. Fill each with about 1/2 teaspoon preserves or until full

  10. Bake in oven for about 20-22 minutes or until edges are just about golden

  11. Allow the cookies to cool completely

  12. Once cookies cool, drizzle your yummy Strawberry frosting
