Mini Banana Almond Flour Apple Fritter Donut Waffles… yes, they’re as dreamy as they sound 🍌🍎

Crispy on the outside, soft and fluffy on the inside, these gluten-free beauties are made with my wholesome banana almond flour and juicy apple bites in every golden waffle pocket. They taste like your favorite apple fritter and donut combined — but with better-for-you ingredients you can feel good about. Perfect for slow mornings, brunch spreads, or a cozy snack that supports your healthy eating goals without sacrificing flavor.

Ingredients

For the Waffle Donut batter

  • 1 cup Banana Almond Flour

  • ½ tsp Cinnamon

  • ¼ tsp Nutmeg

  • 2 Tbs Monk fruit

  • 1 tsp Baking Powder

  • ¼ tsp Salt

  • 1 Tbs Tapioca Flour

  • 1 Egg

  • ⅓ cup Almond Milk

  • ½ Tbsp Coconut Oil or Almond Oil

  • 1 cup Shredded Apples

 

Topping – Banana Flavored Frosting

 

Directions

 

  1. Preheat your waffle iron.

  2. Mix the dry ingredients. Whisk in the egg, milk, and oil.

  3. Gently stir in the shredded apples.

  4. Spray the waffle iron with nonstick spray. Drop the batter by Tablespoon onto the waffle iron. Cook 5-6 minutes, depending on the temperature of your iron. (I used a small Dash/Nostalgia waffle iron and cooked each one for 5-6 minutes.)

  5. Place the waffle donuts on a wire rack to cool.

  6. Spread your flavored frosting over each waffle donut.
