Ingredients

½ cup of Greek yogurt

¾ cup of your choice of sweetener (I like Monk Fruit)

1 egg

2 ¾ cup of lemon almond flour

1 tsp of baking powder

1 zest of lemon

1 tsp pure vanilla extract

Lemon Frosting

 

Directions

Preheat oven to 350 F

Cream yogurt and sugar until mixed well

Beat in the egg, zest, and vanilla

Mix your lemon almond flour and baking powder together 

Add the wet ingredient in with the dry

Refrigerate for 30 minutes

Roll dough to desire thickness and use a cookie cutter of your choice

Please each cookie on a lined (parchment paper) baking sheet

Bake for 14-16 minutes

Cool 10 minutes and drizzle with lemon frosting
