Healthy Coconut Almond Flour Sugar Cookies These holiday sugar cookies are made with almond flour, lightly sweetened, and perfectly crisp on the outside with a soft, melt-in-your-mouth center. Coconut Almond Flour Snow Globe Sugar Cookies
Make 14-18 cookies
Ingredients
¼ cup Coconut Oil, at room temperature
¼ cup of Monk fruit
1 tsp of Vanilla Extract
1 large egg at room temperature or egg replacement (Bob Mills)
2 cups of Coconut Almond Flour
¼ cup Tapioca Four
¼ tsp Baking Soda
Dash of sea salt
Frosting
Use my Coconut or Strawberry Flavored Frosting
Instructions
1. In a large bowl, cream together the coconut oil and sugar until creamy. Add your vanilla and egg.
2. Stir in your dry ingredients until dough forms.
3. Roll into a ball and refrigerate for 2 hours covered in a bowl.
4. Preheat oven to 350 degrees and line your baking sheet with parchment paper.
5. Roll your dough about ½ inch think.
6. Cut out your circles using a cookie cutter and place on baking sheet about 1 inch apart.
7. Bake for 10-12- minutes (until lightly brown).
8. Let cookies cool for 5 minutes and then transfer to cooling rack until completely cooled.
Frosting and Decorations
Apply your frosting however you want. I like mine hilly (not a perfect spread).
Next, add your edible decorations on your frosting — tiny snowmen, Santas, trees (made from fresh rosemary), or snowflakes are perfect! Add some glistening sprinkles last. Top it with a half clear ornament.
