2 ½ cups of coconut almond flour
2 Tbsp of tapioca flour
1 tsp pf baking powder
1 tsp of salt
3/4 cup of Greek yogurt
2 oz of 1/3 less fat cream cheese, softened
1 cup of Monk fruit
2 large eggs
1 tsp of vanilla extract
¼ tsp coconut extract
¼ cup of coconut shreds (toasted)
1 container of my Coconut Frosting

Instructions

1. Preheat oven to 350F and prepare a 9×9 pan by lining with parchment paper.
2. In a bowl, whisk together the almond flour, tapioca flour, baking powder, and salt.
3. In another bowl, combine the yogurt, cream cheese, and Monk fruit using a mixer. Beat until light and creamy. Now add your eggs and extracts and mix well.
4. Mix your wet ingredients with your dry, mixing on medium-low speed until completely combined.
5. Spread batter evenly into prepared pan and bake in the center rack for 25 minutes.  Allow cookie bars to cool completely in pan before covering with the coconut frosting. Do not turn off the oven, you will use it next for toasting your coconut.
6. Line a small cookie sheet with parchment paper and spread your coconut shreds evenly. Toast in your oven for 4-5 minutes until the coconut is lightly browned.
7. spread your frosting in an even layer over your cooled bars and sprinkle the top with the toasted coconut. Enjoy!
