Coconut Almond Flour Cinnamon Mini Bundt Cakes

Golden, cozy, and made with simple ingredients. My coconut almond flour cinnamon mini bundt cakes are gluten free, clean eating friendly, and packed with nourishing goodness to support immune health naturally. The perfect little treat with your morning coffee or afternoon tea.

1 ½ cups cocoanut almond flour

½ cup unsweetened shredded coconut

3 tbsp coconut flour

¼ tsp baking powder

¼ tsp salt

2 tsp ground cinnamon

3 tbsp coconut oil (melted)

2 eggs

¾ cup unsweetened vanilla almond milk

Flavored frosting

 

Directions

1.      Preheat oven to 350 degrees. Spray a mini bundt pan or use silicone molds.

2.      In a bowl, whisk together all the dry ingredients until well combined: coconut almond flour, coconut shreds, coconut flour, baking powder, salt, and cinnamon.

3.      Next, in another bowl, whisk the4 coconut sugar, coconut oil, and eggs until smooth.

4.      Combine the wet with the dry and mix well.

5.      Spoon the batter into the mini molds, filling the mold almost all the way to the top. This will fill 6 molds.

6.      Bake for 20-22 minutes, until golden brown and cooked all the way through.

7.      Let the molds cool down for at least 10 minutes before you try to take the cakes out of their molds.

8.      Once cooled, carefully invert the mold and l allow the cakes to gently fall onto the wire rack.

9.      Melt your frosting for 30 seconds (if that) and drizzle over your mini cakes.

Tips for Baking: Most baking recipes that call for 350°F are written for a regular (conventional) oven. If you’re using a convection oven, the fan circulates hot air and makes desserts bake faster and more evenly, so you should usually lower the temperature to 325°F. At the same temperature, convection can bake items about 20–25% faster, meaning cookies or cakes that normally take 12 minutes may finish in about 9–10 minutes, and a 30-minute cake may be done in about 22–24 minutes. Lowering the temperature helps cookies and cakes bake evenly without over-browning the edges. 🍪🎂I always bake using my convection oven, so please monitor your baking time and always use a toothpick to check for doneness.
