Ingredients

2 1/2 cups banana almond flour

1/4 cup tapioca flour

1 teaspoon baking powder

1/4 teaspoon fine sea salt

1 ripe banana well mashed.

¼ cup coconut sugar, or sub other dry sweetener

2 large eggs

2 tablespoons coconut or almond oil

1 teaspoon vanilla extract

1/3 cup mini dark chocolate chips, plus more for topping ( I like Lily’s)

 

Topping

Banana or Cocoa Frosting 


Directions 

Preheat oven to 350ºF and line a medium loaf pan with parchment paper; set aside.

Mix dry ingredients in a bowl; banana almond flour, tapioca flour, baking powder and salt.

Whisk wet ingredients in a bowl until smooth.

Pour your wet ingredients in with your dry. And mix well. Then fold in chocolate chips.

Pour batter into prepared loaf pan, topping with more chocolate chips.

Bake your banana bread for 20 minutes uncovered, then add foil and bake for another 20 - 25 minutes of baking to prevent the top from browning too quickly.

Check the middle for done-ness with toothpick after 40 minutes to be sure.

Allow bread to cool in pan for 15 minutes before lifting from the parchment paper to remove bread.

Drizzle the top banana or cocoa frosting.

Cool & serve: Allow bread to cool in pan for 15 minutes before lifting from the parchment paper to remove bread.
