 Apple pie or cookie sandwich...why should we have to choose? 🍎🍌🍪

 My Banana Apple Pie Cookie Sandwiches bring cozy fall flavors together with my signature banana flavored almond flour and a creamy apple-cinnamon filling. Made with wholesome ingredients, no added sugar, gluten-free, and designed to be lower in net carbs!

 How many of these fall cookie sandwiches could you eat in one sitting?

  • 2 cups of banana flavored almond flour

  • 2 tablespoons of tapioca flour

  • 1/4 teaspoon of baking powder

  • 1 teaspoon cinnamon

  • 1 egg

  • ¼ cup monk fruit sweetener

  • ¼ cup melted coconut oil

  • 1 teaspoon of pure vanilla extract

  • 2 tablespoons of ripe mashed bananas (optional)

1. Whisk the almond flour, baking powder, salt, and cinnamon until well mixed. Then whisk you monk fruit, oil, vanilla, bananas (optional), and egg until well combined.

2. Combine your wet ingredients into your dry. 

3. Chill for 1 hour.

4. Use a tablespoon size scooper and roll into a ball. Slightly press each cookie to flatten slightly. 

Bake at 350°F for approximately 10–12 minutes in a prepared cookie sheet lined with parchment paper.

 

Apple Cinnamon Filling

Use a finely diced medium apple of your choice and combined it with:

  • 1 teaspoon of cinnamon

  • ¼ cup of monk fruit

  • 1–2 teaspoons tapioca flour, if needed for thickening

  • A small splash of water

  • 2 tablespoons of banana frosting

Cook until softened and thickened on medium on your stove. Slowly stir in your frosting.

Once cooled, place apple mixture between two cookies to make a sandwich. Yum!
