Cocoa Almond Flour Brownie Cups

Living with an auto immune disease means every ingredient matters, but that doesn’t mean giving up brownies. My cocoa almond flour brownie cups are gluten-free, gentle on your system, and made with simple, nourishing ingredients that won’t leave you feeling worse after. They’re rich, fudgy, and just sweet enough to satisfy without overload. When you’re being intentional about what you eat, recipes like this make it easier to stay consistent whiteout feeling restricted. Because taking care of your health shouldn’t mean missing out on foods you love.

 

 
 

Ingredients

 

1 ½ cup of cocoa almond flour

½ cup of Monk fruit or sweetener of your choice

1 tsp of baking powder

½ tsp of salt

1 tsp of vanilla extract

1/3 cup of unsweetened almond milk

1.5 tbsp almond oil or coconut oil

2 eggs

1 cup of dark chocolate chips – I like Lily’s or Bake Believe

 

Instructions

 

1. Preheat your oven to 350F.

2. Combine the cocoa almond flour, sweetener, baking powder, and salt.

3. In a sperate bowl, combine the almond milk, oil, vanilla, and eggs.

4. Combine your wet ingredients with your dry. Fold in your chocolate chips.

5. Use cupcake liners and slightly; spray the inside. Then use a ¼ cup and scoop the batter in each cup.

6. Bake for 22-24 minutes.

7. Remove and set aside to cool for 10 minutes.

Tips for Baking: Most baking recipes that call for 350°F are written for a regular (conventional) oven. If you’re using a convection oven, the fan circulates hot air and makes desserts bake faster and more evenly, so you should usually lower the temperature to 325°F. At the same temperature, convection can bake items about 20–25% faster, meaning cookies or cakes that normally take 12 minutes may finish in about 9–10 minutes, and a 30-minute cake may be done in about 22–24 minutes. Lowering the temperature helps cookies and cakes bake evenly without over-browning the edges. 🍪🎂I always bake using my convection oven, so please monitor your baking time and always use a toothpick to check for doneness.
